I send cheques from Canada to the US a few times a year.
I started out with nothing and I still have most of it.

Over Holiday Weekends, there are apparently no pickups. The mail often backs up and even overflows. I have found letters on the ground in front of the box. Maybe they reached in and grabbed mail.

How much are these convenience fees you are charged?? Generally, they are a dollar or two, but the stamp, envelope, and processing time would more than make it an even breakpoint.

Plus, even with the convenience fee, I have an actual transaction record, where I can prove the date and time the payment was sent, usually with a confirmation number. Dropping a check in the mail, WTH knows when/if it’ll arrive?

Any day there's mail delivery, there are mail pickups. The mail never stops moving.

I'm calling bullshit. What "well-known" bank? No bank today would ONLY do paper-based transactions. That would be a terrible business model in this technologically-advanced world we live in.

Easily make payments to your Wells Fargo credit and loan accounts. You can fund payments from your accounts at Wells Fargo or other U.S. banks.
You should probably set that up so you don't have to write paper checks and waste your time and stamps.

I also have a credit card with them that allows online payments, which I do. The HELOC payment can only be made with a paper check, go figure...

It used to be that there were large regional Post Offices that said "Continuous Collection" on the boxes, but the vast majority give a specific last pick up time, and say there is no pickup on Sundays and Holidays. If you know of a post office that actually does pick up on Sundays and Holidays, please tell us where they are.
