The last nighttime host on the big three worth watching was Leno.

Agreed

When we were in Florida this year, Leno was on every night at midnight, running some kind of game show

If you're talking about sitcoms, you are correct. What I used to call The Mork & Mindy Syndrome. More recently Big Bang Theory is a good example.

The show starts out with just a few main characters. And it's a great show. Then the writing gets stale. The writers start running out of ideas. Instead of hiring new writers with fresh ideas, the same writers bring in more characters. And in my opinion it makes the show a little less special and a little too hectic. Just my view.

Really it’s literally that… there was a show where that happened… after that it could no longer be taken seriously.

That came from Happy Days where they were running out of ideas and had Fonzie literally "jump a shark". It's also called "Ted McGinley Syndrome". Love Boat, Happy Days, Married...With Children...once he shows up, the clock is ticking.
