I do that as well as toss in a can of sliced mushrooms and a bit of grated parmigiano reggiano when finished.

Oh, substituting parsnips instead of carrots, or a mixture of both, is a favorite of mime.
I might even take a pot down to the local gendarme stations Saturday night as I'm sure they'll be putting in some long hours.
